Dominique Persoone the renowned Belgium chef and chocolatier, or rather as he is known the “Shock-o-latier”, has come to notoriety for his creation of a chocolate shooter. In preparation for a surprise birthday party honoring Rolling Stone greats Ronnie Wood and Charlie Watts, their wives called on Persoone’s assistance to help prepare for the party’s dessert menu with a humorous edge. In response Personne created a dessert with “different structures of raspberry”, and in lieu of the chocolate being on the dish, he created a machine designed to enable the guests to sniff the chocolate. The machine according to Paul Ames of the WSJ, ejects “finely ground dust of pure Dominican Republic cocoa cut with ginger and mint which his “chocolate shooter” catapults nose-ward to fill the brain with an explosion of phantom flavors”.
